Roasted Tilapia over Mamaliga with Tomato Relish

What a treat this dish is!  Everything blends in perfectly.  Enjoy!
Ingredients:
-4 tilapia fillets
-salt and pepper, to taste
-a little extra virgin olive oil
-a handful grape tomatoes, halved
-1 clove garlic, minced
-1 Tbs capers
-1 Tbs caper juice
-2 Tbs lemon juice
-2 Tbs extra virgin olive oil
-about 10 kalamata olives, pitted and quartered
-plain mamaliga
Directions:
 Prepare the tomato relish at least one hour before serving this dish.  In a medium bowl, mix the tomatoes with the garlic, capers, caper juice, lemon juice, olive oil and kalamata olives.  Stir, cover and let it sit on the kitchen counter.
Preheat oven at 425 F.  Rub each fillet with some olive oil on both sides.  Season the fish with salt and pepper.  Place on baking sheet.  Roast in preheated oven for 12 minutes.  To serve, place some mamaliga on the plate.  Top with roasted tilapia and a generous portion of the tomato relish.  Enjoy!
