Lamb with Red Onions, Asparagus and Olives

Oh, how I LOVE this dish!  The lamb is super good, moist, tasty and the veggies complement it perfectly.  I served ours with some yummy homemade mashed potatoes.  Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-1 lb lamb, trimmed of visible fat and sliced into thin strips
-1 red onion, sliced
-1 lb asparagus, trimmed and cut into 1/2 inch pieces
-2 (6 oz) cans black pitted olives, drained
-2 Tbs balsamic vinegar
-salt and pepper, to taste
Directions:
Heat oil in large skillet.  Add lamb and cook for about 4 minutes, or until browned.  Transfer to a clean plate and set aside.  In the same skillet add onions and asparagus.  Cook for 4-5 minutes, stirring occasionally.  Return lamb and any juices to the pan.  Stir in the olives, vinegar, salt and pepper.  Stir well.  Enjoy!
