Banana Streusel Muffins with Oatmeal and Pecans

Easy and super delicious, this is yet another way to use those overripe bananas.  Enjoy!
This recipe yields about 26 muffins.
Ingredients:
For muffins:
-2 large eggs
-1/3 cup packed brown sugar
-2 tsp baking soda
-1/2 tsp salt
-1/2 tsp cinnamon
-4 overripe bananas
-1/2 cup apple sauce
-1/4 cup vegetable oil
-1 tsp vanilla extract
-1 1/2 cups flour
-1/2 cup quick oats
-1/3 cup chopped pecans
For streusel:
-2 Tbs unsalted butter, softened
-5 Tbs flour
-2 Tbs packed brown sugar
-1/4 tsp cinnamon
Directions:
Preheat oven to 375 F.  Line muffin tins with cupcake liners and set aside.
In your mixer's bowl, cream the eggs and sugar.  Slowly, add remaining ingredients.  Mix until well combined.  Pour batter evenly into 26 lined muffin cups.
In a small bowl, mix together the streusel ingredients.  Use your hands for better mixing, until it becomes like wet sand in texture.
Sprinkle the streusel mixture evenly on top of the muffins.
Bake in preheated oven for about 20 minutes or until toothpick comes out clean.
Cool in the pan on the rack for 10 minutes.  Remove from the pan onto wire rack and let cool completely.  Enjoy!

Baked Cheesy Veggie Pasta Casserole

What a delight this dish is!  It's also very quick (under 30 minutes).  I served ours with some garlic bread and it was a wonderful combination.  Enjoy!
Ingredients:
-1 lb pasta (any shape you like; I used bow ties)
-2 small zucchinis or 1 medium, chopped
-8 oz baby bella mushrooms, chopped
-1 (24 oz) jar pasta sauce
-1 cup shredded mozzarella cheese, divided
-1/2 cup shredded Parmesan cheese, divided
-1 tsp dried oregano
-1 tsp dried basil leaves
Directions:
Preheat broiler on high.
Bring a pot of salted water to a boil.  Add the pasta and cook for 10 minutes.  Add the chopped zucchini and mushrooms and boil for 2 more minutes.  Drain. 
To the pot, add the pasta sauce and mix well.  Stir in 1/3 cup of the mozzarella and 1/4 cup of the Parmesan.  Mix well.  Sprinkle with the oregano and basil.  Mix well and pour mixture into 9x13 baking pan. Top with remaining mozzarella and Parmesan.
Broil in preheated oven for about 5 minutes or until cheese is nicely melted and golden brown.  Enjoy!

Slow Cooker Cheesy Salsa Chicken

Easy and so, so delicious!  I served ours on top of rice with some veggies on the side. Great meal!  Enjoy!
Ingredients:
-4 chicken thighs, skin-on, bone-in
-1 (15.5 oz) jar medium chunky salsa
-1 cup shredded cheddar cheese
Directions:
Coat your slow cooker with cooking spray.  Add the chicken and top with the salsa.  Cover and cook on low for 4 hours.
At the end of the 4 hours, preheat the oven to 425 F.
Carefully, remove the chicken and salsa onto 9x13 baking dish.  Sprinkle on top with the shredded cheese.  Bake in preheated oven for 15 minutes or until the cheese is nicely melted and golden brown.  Serve on top of rice.  Enjoy!

One Pot Cajun Chicken Pasta

This is so easy and very delicious!  I love that it has a nice kick to it as well.  The flavors blend together wonderfully.  This is definitely a winner dinner.  Enjoy!
Ingredients:
-4 chicken breasts, skinless, boneless, cut into chunks
-2 garlic cloves, minced
-1 Tbs + 1 tsp Cajun seasoning
-1 red bell pepper, seeded, halved and cut into strips
-3 cups chicken broth
-8 oz fettuccine pasta, broken in half
-1/2 cup heavy whipping cream
Directions:
Spray a large sauce pan with cooking spray.  Add the chicken, garlic and Cajun seasoning.  Give it a good stir and cook for about 8-10 minutes or until chicken is cooked through.  Add the bell pepper and cook for a couple more minutes.  Remove mixture onto plate.
Return sauce pan to stove and add the broth.  Bring to a boil.  Add the pasta and cook for 10 minutes, stirring occasionally. Stir in the heavy cream.  Return chicken mixture to pot. Stir and cook for 2-3 more minutes.  Enjoy!

Simple Creole Shrimp

This is quick and super delicious!  The flavors are absolutely wonderful together.  Enjoy!
Ingredients:
-4 Tbs butter
-1 green pepper, chopped
-1 medium onion, finely chopped
-1 tsp Creole seasoning
-1/4 cup flour
-4 Roma tomatoes, chopped 
-8 oz clam juice
-1 Tbs Worcestershire sauce
-1 Tbs Louisiana-style hot sauce
-1 1/2 lbs large shrimp, peeled, deveined, with tails removed
-cooked rice
Directions:
Melt butter in large saucepan.  Add the green pepper, onion and seasoning.  Mix well and cook for about 15 minutes or until veggies are nice and tender.
Sprinkle the flour over the veggies.  Give it a good stir and cook for 2 minutes.  Add the tomatoes and cook for 2 more minutes.  Stir in the clam juice and cook for a couple more minutes.
Add the Worcestershire and hot sauces.  Stir.  Add the shrimp.  Give it a good stir and cook for 5 minutes or until shrimp is cooked through.
Serve this goodness on top of some cooked rice.  Enjoy!

Slow Cooker Cheesy Chicken and Broccoli

This is a great meal for a very busy night.  The flavors are amazing together.  Serve over rice and enjoy!
Ingredients:
-2 (10 3/4 oz each) cans cream of chicken soup
-2 (10 3/4 oz each) cans cheddar cheese soup
-2 cups chicken broth
-1 tsp Cajun seasoning
-1 tsp garlic powder
-1 tsp salt
-4-5 chicken breasts, skinless, boneless
-1 cup sour cream
-1.5 lbs broccoli, cut into florets
-shredded cheddar cheese, for topping
-cooked rice
Directions:
In your slow cooker, mix the soups, broth, Cajun seasoning, garlic powder and salt.  Add the chicken and cover with the soupy mixture.  Cover and cook on low for 5 hours.
Towards the end of the 5 hours, bring a pot of water to a boil. Add the broccoli florets and cook for only 3 minutes.  Drain.
Meanwhile, using 2 forks, shred the chicken breasts in large chunks. Stir in the sour cream and steamed broccoli.
Serve on top of cooked rice with some shredded cheddar on top.  Enjoy!

Aloha Pasta Salad

This is nice, fresh and quite tasty.  A very nice change form the regular pasta salad.  Enjoy!
Ingredients:
-1 1/2 cups dry elbow macaroni
-1 (20 oz) can pineapple tidbits-reserve 1/2 cup of juice for dressing; drain the rest
-8 oz cubed ham
-5 green onions, chopped
For dressing:
-reserved 1/2  cup pineapple juice
-1/2 cup mayonnaise
-1/4 cup plain Greek yogurt
-1 Tbs apple cider vinegar
-1 Tbs sugar
Directions:
Cook macaroni according to package directions.  Drain, rinse with cold water, drain again and place in large pasta bowl.  Add drained pineapple, ham and onions.  Mix.
In a separate bowl, combine dressing ingredients.  Mix well and pour over pasta mixture.  Mix again and enjoy!

Strawberry Muffins

Oh, how I love strawberry season!  Yes, you can eat strawberries raw without anything; but you can also enjoy them in a variety of sweet concoctions.  This is one of those delightful creations.  Enjoy!
Yields 24-28 regular size muffins
Ingredients:
-2 large eggs
-1 1/2 cups sugar
-1 Tbs baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1 Tbs cinnamon
-1 1/4 cups milk
-2 sticks unsalted butter, melted
-3 cups flour
-2 cups fresh strawberries, chopped
Directions:
Preheat oven to 375 F.  Line muffin tins with paper liners.  Set aside.
In your mixer's bowl, cream the eggs and sugar.  Once it becomes beautiful, like a meringue, add the baking powder, baking soda, salt and cinnamon.  Mix well.  Slowly, add the milk, then the melted butter.  Stir in the flour, 1/2 cup at a time.  Lastly, once everything has been well mixed, stir in the strawberries.  
Fill prepared muffin tins with the batter.  Bake in preheated oven for about 25 minutes or until toothpick comes out clean.
Cool in pans on wire rack for 10 minutes.  Remove muffins straight onto wire racks and let cool completely.  Enjoy!

Chicken Parmesan Bake

Super easy and super delicious! Enjoy!
Ingredients:
-4 chicken breasts, boneless, skinless, cut into bite size chunks
-1 3/4 cups marinara sauce
-2 tsp dry basil leaves
-1 1/2 cups shredded mozzarella cheese
-6 Tbs garlic butter (I used the one from Costco with basil and parmesan, but any garlic butter will do), melted
-8 oz refrigerated home style biscuits
-1/2 cup grated Parmesan cheese
Directions:
Preheat oven to 375 F.
In a 9x13 baking pan, place the chicken on the bottom.  Pour the marinara sauce and basil on top.  Mix and spread chicken in single layer.  Sprinkle with the mozzarella cheese.
Break the biscuits into quarters and dip them in the melted garlic butter.  Place on top of the chicken.  Top casserole with the Parmesan cheese.
Bake in preheated oven for 25-30 minutes or until top is beautiful and golden brown.  Let it sit for about 5 minutes, then enjoy!

Spicy One Sheet Roasted Peppers, Kielbasa and Potatoes

Delicious, delicious, delicious!  This is super easy, as you chop everything, place it on the sheet and roast!  That's it!  The results are just amazing!  The flavors are perfectly combined.  Enjoy!
Ingredients:
-2 medium potatoes (1 lb), peeled and cut into bite size chunks
-1 lb Polska Kielbasa, cut into bite size chunks
-1 small red onion, peeled and cut into large chunks
-1 green bell pepper, seeded and coarsely chopped
-1 red bell pepper, seeded and coarsely chopped
-1/2 cup drained mild, deli sliced yellow pepper rings
-2 Tbs extra virgin olive oil
-1 tsp Creole seasoning
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Preheat oven to 400 F.
Place everything on the baking sheet.  Mix very well and spread on the sheet in single layer.  Roast for 30-35 minutes or until veggies are tender.  Enjoy!
