Skinny Biscuits

Normally you put butter or sour cream in a biscuit batter to make them fluffy and moist.  Well, this recipe uses non-fat plain yogurt and the result is just the same!  The biscuits are fluffy and moist and delicious.  They're basically zero fat, with only the calories from the flour!  How awesome!  And they keep like that for a couple of days.  Very nice!  Enjoy!
-2 cups flour
-1 Tbs baking powder
-1/2 tsp baking soda
-1 tsp salt
-1 1/4 cups non-fat plain yogurt
Preheat oven to 425 F.  Coat a baking sheet with cooking spray and set aside.
Using a wooden spoon, combine the flour, baking powder, baking soda and salt.  Mix well.  Stir in the yogurt and mix until a dough forms.
Place the dough on a lightly floured surface and roll until about 3/4 inch thick.  Cut into desired shapes.  Combine scraps, roll and cut.  Repeat of necessary.  Place biscuits on prepared sheet.  Bake in preheated oven for 12 minutes or until golden brown.  Enjoy!

Slow Cooker Mississippi Roast

Wow, wow, and more wow!  That's all I have to say about this one!  It's super simple to put together and the taste is amazing!!!  Make sure to use the au jus gravy mix.  It gives it such a distinct flavor!  Also, use unsalted butter because the recipe runs a little on the salty side and you don't want to oversalt it.  You can serve it with mashed potatoes, rice, pasta, veggies, or like we did, as a sandwich.  Either way, it's out of this world delicious!  Enjoy!
-1/4 cup water
-3 lbs roast beef (I used rump roast,but any cut works just fine)
-1 packet dry ranch seasoning mix
-1 packet dry au jus gravy mix
-1 stick unsalted butter, cut into small pieces
-1 cup sliced pepperoncinis, drained
Pour water on bottom of slow cooker.  Add the beef.  Sprinkle the ranch and gravy mixes on top.  Place the butter pieces over the seasonings.  Top is all with the pepperoncini slices.
Cover and cook on low for 8 hours.  Shred the meat in the crockpot, then mix it well with the gravy.  Serve as a sandwich or with your chosen sides.  Enjoy!

Slow Cooker Teriyaki Chicken

Super simple and super delicious!  Enjoy!
-4 chicken thighs, skin-on, bone-in
-1 cup teriyaki sauce
-1 cup water
-2/3 cup brown sugar
-3 cloves garlic, minced OR 1 Tbs garlic powder
-1 Tbs ground ginger
Coat slow cooker with cooking spray.  Add the chicken.  Combine remaining ingredients and pour over chicken.  Cover and cook on low for 4 hours. Serve over cooked rice Enjoy!

Double Fudge Banana Muffins

Yes, again I had some ripe bananas that needed to be used.  So, I made these and they were quick and delicious!  And you don't even need a mixer for this.  It's all combined manually.  Enjoy!
-1 egg, beaten
-1/4 cup packed brown sugar
-1/3 cup sour cream
-1 tsp vanilla extract
-3 medium ripe bananas, mashed
-1 cup flour
-1/2 tsp baking soda
-1/2 tsp baking powder
-1/2 tsp salt
-1/4 cup unsweetened cocoa powder
-1 cup semi sweet chocolate chips
Preheat oven to 350 F.  Line 12 muffin cups with paper liners.  Set aside.
Combine all ingredients into one large bowl and gently mix by hand until well incorporated.  Scoop evenly into prepared cups.  
Bake in preheated oven for 20-25 minutes or until toothpick comes out clean.  Enjoy!

Slow Cooker Inside Out Chicken Pot Pie

Another quick to put together, easy and delicious meal for your crockpot.  Enjoy!
-3 (10 3/4 oz) cans cream of chicken soup
-1 (10 3/4 oz) can cream of celery soup
-3 chicken breasts, boneless, skinless, cut into large chunks
-1 (1 lb) bag frozen mixed vegetables
-1 packet dry onion soup mix
-3 russet potatoes, peeled and cut into large chunks
-1/2 cup water
-baked biscuits
In a large bowl, combine soups, chicken chunks, frozen veggies, soup mix, potatoes and water.  Give it a really good stir.  Pour into slow cooker.  Cover and cook on low for 5 hours.
Scoop mixture onto plates and top with baked biscuits.  Enjoy!

Easy Caribbean Pineapple-Lime Ice Cream (without an ice cream maker!)

This is super easy and very delicious!  I love the combination of the crushed pineapple with the lime juice, plus the sweetness of the heavy cream and condensed milk.  So creamy and delicious!  Enjoy!
-1 (20 oz) can crushed pineapple (keep the juice too)
-1 (14 oz) can sweetened condensed milk
-1 small lime
-2 tsp vanilla extract
-1 cup heavy cream
Combine the pineapple (and the juice) and the milk.  Mix well.  Zest the lime and add the lime to the mix.  Also, add the juice of the lime.  Mix well.  Stir in the vanilla.
Beat the heavy cream until stiff peaks form.  Fold into the pineapple mixture.
Pour mix into 9x5 inch loaf pan or 2 quart dish.  Cover and freeze for at least 3 hours.

Slow Cooker Honey Sesame Chicken

A true delight this dish is!  Easy, simple and delicious!  A wonderful combination of flavors.  Make sure to use the chicken thighs, not breasts.  The thighs are more moist, as opposed to the breasts who tend to be more on the dry side.  Other than that, enjoy!
-2 lbs chicken thighs, boneless, skinless
-1 tsp salt
-1 tsp pepper
-1 small onion, finely diced
-2 cloves garlic, finely minced
-1/2 cup honey
-1/2 cup soy sauce
-1/4 cup ketchup
-2 Tbs vegetable oil
-1/2 tsp red crushed pepper flakes
-3 green onions, sliced, for garnish
-toasted sesame seeds, for garnish
Coat your slow cooker with cooking spray.  Season the thighs with the salt and pepper, and lay on bottom of slow cooker.
In a medium bowl, combine the onion, garlic, honey, soy sauce, ketchup, oil and red pepper flakes.  Mix well and pour over thighs.  Cover and cook on low for 3 1/2 hours.
Shred the chicken, mix it well with the sauce, cover and cook for 30 more minutes.
Serve on top of cooked rice and garnish with the green onions and sesame seeds.  Enjoy!

Easy Maple Sausage Casserole

This is very easy and also delicious!  As with most casseroles, this one can be assembled before hand, then simply baked when needed.  I love the slight spiciness of the sausage combined with the sweetness of the maple syrup.  Very nice!  Enjoy!
-1 lb bulk mild pork sausage
-1/4 cup maple syrup
-2 cans crescent rolls
-2 cups shredded Cheddar cheese
-9 eggs, beaten
-butter flavored cooking spray
Preheat oven to 350 F.
Brown and crumble the sausage.  Add the syrup and cook for a couple more minutes.
Coat 9x13 baking dish with butter flavored cooking spray.  Line the prepared dish with one package of the rolls.  Make sure to seal the seams.  Add the cooked sausage and cheese.  Pour the beaten eggs on top.  Top with the second package of the roll.  Coat with butter flavored cooking spray on top.
Bake in preheated oven for 35 minutes.  Let it rest for 5 minutes.  Slice and enjoy!

Slow Cooker Triple Chocolate Cake

Yes, it's a TRIPLE chocolate cake.  And yes, it's done in the slow cooker.  And yes, it's delicious!  And super easy too! It's also very, very moist, so you can serve it as is, or with some ice cream on top.  Enjoy!
-1 (15.25 oz) box Devil's food cake mix
-1 (3.9 oz) box instant chocolate pudding mix
-1 cup semi sweet chocolate chips
-2 cups sour cream
-3/4 cup vegetable oil
-4 eggs
-1 cup water
Coat slow cooker with cooking spray.  In a large bowl, mix all ingredients together.  Pour into crock pot.  Cover and cook on low for 5 hours.  Carefully, invert it onto a plate.  Slice and enjoy!

Creamy Jalapeno Ranch Dip/Dressing

This can be used as either dip or salad dressing.  However you want to use, it is insanely delicious!  I could literally drink this stuff up, is that good.  I can't get enough of it.  And no, it's not spicy, despite the jalapenos in it.  Super extra good!  Enjoy!
-1/2 cup mayonnaise
-2 cups sour cream
-1/2 cup buttermilk
-1/2 cup green salsa
-1.5 packets ranch dressing dry mix
-1/3 cup pickled jalapenos, drained
-1 Tbs lime juice
Place all ingredients in your blender.  Process until smooth. Place in container, cover and refrigerate for at least 30 minutes before serving.  Store in the fridge.  It will last about a week.  Enjoy!

Slow Cooker Spicy Pork Chops

Easy, simple and delicious!  Enjoy!
-1 (8 oz) can tomato sauce
-4 (5 oz each) pork chops, boneless, trimmed of all visible fat
-1 medium onion, halved and thinly sliced
-1 Tbs brown sugar
-2 Tbs Worcestershire sauce
-2 tsp vinegar
-2 tsp Tabasco sauce
-a dash of salt
-4 cloves garlic, finely minced
Pour tomato sauce on bottom of crockpot.  Layer chops right on top.  Add the onion slices on top of the pork.
In a small bowl, combine remaining ingredients.  Pour over pork and onions. 
Cover and cook on low for 4.5-5 hours.  The onions will still have a little crunch to them!  Serve over white rice.  Enjoy!

Apple and Cream Cheese Dessert

This is an easy and quick dessert.  It's also quite versatile as you can replace the apples with cherries, strawberries, pears, or any other fruit you like.  Also, instead of the pie filling, you can use preserves or fresh fruit. If using fresh fruit, make sure to cook it before and mixing it with some sugar and spices such as vanilla or cinnamon.  However you want to make it, it's delicious!  And easy!  Enjoy!
-4 oz cream cheese, at room temperature
-1/2 cup sugar
-1/2 tsp vanilla extract
-1 package (8 rolls) of crescent rolls
-1 (21 oz) can apple pie filling
-2 tsp cinnamon
-butter flavored cooking spray
For cinnamon sugar topping:
-1/8 cup sugar
-1 tsp cinnamon
Preheat oven to 350 F.  Coat an 8x8 baking dish with butter flavored cooking spray.  Set aside.
Mix together the cream cheese, sugar and vanilla.  Mix until well combined.
Divide the dough into half (you'll have 4 rolls into each batch).  Unroll one half of the dough and pinch the seams together so that instead of 4 separate crescents you'll have one piece of dough.  Place that on the bottom of the prepared pan.  Top with the cream cheese mixture.  Top that with the apple pie filling.  Sprinkle the 2 tsp cinnamon on top.  Place the other half of dough on top.  Coat that dough with some butter flavored cooking spray.
Mix the cinnamon sugar topping ingredients and sprinkle all of it on top the second dough.  
Bake in preheated oven for 30 minutes.  Let it rest for 5 minutes.  Serve hot by itself or with a scoop of ice cream on top.  Enjoy!

Flourless Banana Bread Pudding

I had some very ripe bananas that I needed to use.  I just didn't want to make another banana bread, muffins or cupcakes.  I was trying to make something less fatty, low in calories, but still delicious.  Well, this seemed like the obvious choice.  It was exactly that: low in calories, delicious and topped with chocolate.  Win-win!  Enjoy!
-3 ripe bananas
-2 large eggs
-1/4 cup sugar
-1/2 cup milk
-1/2 tsp vanilla
-1 Tbs cornstarch
-1 tsp ground nutmeg
-1/4 cup semi sweet chocolate chips
Directions:Preheat the oven to 350 F.  Grease a 9" pie pan or 8x8 baking dish.  Set aside.
Put the bananas, eggs, sugar, milk, vanilla and cornstarch in a blender.  Mix until foamy.  Pour mixture into prepared pan.  Sprinkle nutmeg on top.
Bake in preheated oven for 20 minutes.
Quickly spread the chocolate chips all over and return to the oven.  Continue baking for 20 more minutes.  Carefully, remove from the oven.  Using a little spatula or knife, spread the melted chocolate all over the top.  Let it cool completely.  Slice and enjoy!
You can refrigerate the leftovers for a couple of days.  Enjoy!

Creamy Cheesy Chicken Rollups

So quick, simple and delicious!  This is another family favorite.  It will melt in your mouth!  Enjoy!
-butter flavored cooking spray
-2 chicken breasts, boneless, skinless
-1 cup Italian style bread crumbs
-1/2 cup Parmesan cheese, grated
-1/4 cup margarine, melted
-1 (8 oz) container chive and onion cream cheese
Preheat oven to 350 F.  Coat a 9x13 baking dish with butter flavored cooking spray.
Cut the breasts into half.  Pound each half until nicely thinned out.
In a shallow bowl, combine the bread crumbs with the Parmesan cheese.  Mix well and set aside.
Pour the melted margarine into another shallow bowl.
Dip one side of each chicken breast into the melted margarine, then into the bread crumbs mixture.  Place a generous dollop of the cream cheese on the other side of the breast that has not been dipped.  Roll up each breast and place in prepared pan seam side down.
Lightly coat the top of each breast with butter flavored cooking spray.
Bake in preheated oven for 35-40 minutes or until chicken is cooked through.  Enjoy!

Quick Caramel Rolls

This is quick to put together.  I love that all the prep work is done in the evening, before you go to bed.  Then, in the morning, all you have to do is stick it in the oven and enjoy it.  Easy-peasy!  And super delicious too!  Enjoy!
- 1 (1 lb) loaf frozen bread dough
-3/4 cup walnut pieces
-1/2 package cook and serve butterscotch pudding (not the instant type)
-1/2 cup packed brown sugar
-1/2 cup margarine
-1 tsp water
Thaw the bread dough for 45 minutes.
Coat a Bundt cake pan with butter flavored cooking spray.  Sprinkle the nuts all over the bottom.
Cut the bread into 12 equal parts and place on top of nuts.
Combine the pudding, sugar, margarine and water in a small saucepan.  Cook over medium heat until bubbly.  Pour evenly on top of bread.  Cover lightly with a kitchen towel-it will not stick!  Leave it like that on the kitchen counter overnight.
In the morning, the dough should have risen beautifully.
Preheat the oven to 350 F.  Bake rolls for 15-20 minutes.
Remove from the oven and let it sit for 5 minutes.  Invert onto a serving plate.  The sauce will drizzle nicely all over.  Enjoy!

Easy Tomato Soup with Orzo

I know, it's officially spring now, so the weather should be warmer.  But here, where I live, the winter seems to not want to let go.  We've had quite a bit of snowy, cold days lately.  So, yes, a warm soup was definitely welcomed.  I like this soup.  It's super easy and quick (under 30 minutes) and the flavors are fresh and wonderful.  You can serve it simple or with some nice grilled cheese sandwiches on the side.  Enjoy!
-cooking spray
-1 large onion, finely diced
-3 cloves garlic, minced
-4 cups chicken or vegetable stock
-1 (28 oz) can crushed tomatoes
-1/4 tsp turmeric
-1.5 tsp salt
-1 tsp pepper
-1/2 cup orzo
-1/2 cup half and half
Coat a non-stick pot with cooking spray.  When hot, add the onion and cook for about 7-10 minutes,  Add the garlic and cook for 1 minutes.  Add the stock, tomatoes, turmeric, salt and pepper.  Give it a good stir and bring it to a boil.  Add the orzo and cook for 10 minutes.  Stir in the half and half and cook for a couple more minutes. 
Ladle into soup bowls and enjoy!

Super Easy Ice Cream Sandwich Cake

Yes, it's quick and super easy, and oh, sooooo delicious!  The Magic Shell creates the "glue" between the layers.  It also keeps really well in the freezer for a few days.  Yum!  Enjoy!
-12 ice cream sandwiches
-caramel magic shell
-chocolate magic shell
-8 oz whipped topping, thawed
Unwrap all the ice cream sandwiches.  Lay three of them on the bottom of your serving dish.  Drizzle some of the caramel and chocolate sauce on all of them.  Add the next layer of 3 sandwiches on top.  Drizzle with the sauces.  Repeat the layers until all sandwiches are used.  Frost the outside with the thawed topping.   Drizzle some more caramel and chocolate sauce on top.
Place in the freezer for at least an hour or until ready to serve.  Enjoy!

Slow Cooker Orange Pork Chops

This is another very simple dish for those really busy days.  I love the orange paired with the pork.  Very nice combination of flavors.  I served ours with some rice and veggies.  Enjoy!
-4 pork chops, boneless
-1 cup orange juice
-1 cup chicken broth
-2 Tbs honey
-1 tsp garlic powder
-1 tsp brown sugar
-1 Tbs cornstarch
-2 Tbs water
Coat a large skillet with cooking spray.  Quickly brown the chops on both sides.  Transfer to the slow cooker, along with all the juices from the skillet.
In a bowl, mix together the orange juice, chicken broth, honey, garlic powder and brown sugar.  Mix well and pour over pork.  Cover and cook on low for 5 hours.
Remove the pork form the slow cooker.  Transfer the sauce to a saucepan and heat over medium heat.  Combine the cornstarch and water and pour in the saucepan.  Bring the sauce to a simmer and let it cook until thickened (5-10 minutes).
Pour over pork and rice.  Enjoy!
