Shrimp stir-fry
This is an easy recipe for a nice, light dinner. Of course you can add any veggies you would like. The ones I posted is what I had on hand. Enjoy!
Ingredients:-2 Tbs brown sugar
-1/4 cup soy sauce
-1 Tbs rice vinegar
-1 cup chicken broth
-1 1/2 Tbs cornstarch
-2 Tbs vegetable oil
-1 small onion, sliced
-1 cup red, yellow and green pepper strips
-1 can baby corn, drained
-2 cups sliced mushrooms
-1 cup broccoli florets
-10 cloves garlic, minced
-1 lb large cooked shrimp, thawed with tails removed
Directions:
In a small bowl, combine brown sugar, soy sauce, rice vinegar, broth and cornstarch. Mix well and set aside.
In a large saute pan or wok, heat up the oil. Add garlic and saute for about a minute-make sure it doesn't burn!:) Add veggies and cook for 10 minutes. Pour sauce and cook for about 4 minutes, or until thickened. Add shrimp and stir to coat and heat up. Serve over rice. Enjoy!
