Lime Shrimp Lettuce Wraps
This was a quick recipe for a nice, light dinner. It's a Paula Deen recipe that I found on foodnetwork.com. Enjoy!
Ingredients:
-3 Tbs lime juice
-3 Tbs vegetable oil, divided
-2 Tbs soy sauce, divided
-3 Tbs grated ginger
-1 clove garlic, minced
-1 lb medium shrimp, peeled, deveined and chopped
-1/2 red bell pepper, diced
-2 green onions, diced
-1 can water chestnuts, drained and chopped
-1 head iceberg lettuce, cored, cut in half
Directions:
In a medium bowl, combine lime juice, 2 Tbs oil, 1 Tbs soy sauce, ginger and garlic. Add shrimp and let marinate in the fridge for 30 minutes.
Heat 1 Tbs oil in skillet. Add pepper, onions and chestnuts. Cook for about 3 minutes, stirring occasionally. Add shrimp and marinade, and cook for 3 more minutes, or until shrimp gets pink. Stir in 1 Tbs soy sauce.
Divide lettuce into leaves. Spoon about 1/4 cup shrimp mixture in the center of lettuce leaf. Fold bottom edge and sides up and over filling. Enjoy!
