This dish is perfect for a busy week night. It's quick, easy, and so delicious! Enjoy!
Ingredients:
-1 lb bacon, chopped
-2 lbs broccoli, cut into florets
-3/4 cup water
-2 Tbs soy sauce
-1/2 tsp sesame oil
-cooked rice, to serve
-sunny side up eggs, to serve
Directions:
Brown the chopped bacon in large skillet. Once done, scoop it up and place to drain on plate lined with paper towels.
Discard most of the bacon grease, leaving only about 2 Tbs of it in the pan. Return pan to stove and add the broccoli florets. Cook, stirring occasionally, for about 5 minutes, until the broccoli starts to get roasted. Add the water and simmer for 5-7 minutes. Stir in the soy sauce and sesame oil. Give it a good stir and cook for one more minute.
To serve, place some cooked rice in a bowl. Top with the broccoli and bacon. Finally, place a sunny side up egg right on top. YUM! Enjoy!
