Easy Homemade Hashbrowns

We love hashbrowns and they're so easy to make. Potatoes are inexpensive and available year round. You can make these in advance and freeze immediately or enjoy them fresh, right as you make them. Super easy and yummy. I'm not including any quantities in this post because you can make as little or as much as you want. Also, you can alter the spices and toppings as you like. The possibilities of making these to your liking are endless. Enjoy!
Ingredients:
-potaotes
-butter
-salt and pepper
-cheese
-other optional toppings: bacon bits, chives, green onions, onions, etc
Directions:
Peel the potatoes, then grate. I make large quantities for my big family, so I like to use my food processor for this. Whatever you use, make sure it's on the big shredding setting.
Once shredded, use a lemon squeezer to get all the liquid out of them. If you don't have a squeezer, place shredded potatoes in kitchen towels and squeeze until liquid is gone.
At this point you can either bag the hashbrowns and freeze or cook them.
To cook them, melt some butter in a skillet. For one serving, place about a cup of potatoes in the melted butter. Season with salt, pepper, cheese, and other desired toppings. Cook until golden brown on the bottom. Flip and get the other side golden brown. Get onto plate and top with some sunny side up eggs. YUM! Enjoy!
