Pork and Beans Stir-Fry
This is quick, easy, and delicious! I used ground pork and roasted green beans. It is such a delight! Enjoy!
Ingredients:
-1.5 lbs green beans, trimmed
-1/2 tsp sugar
-1garlic clove, minced
-1/2 tsp crushed red pepper flakes
-1.5 lbs ground pork
-1 cup chicken broth
-2 Tbs soy sauce
-1 Tbs rice vinegar
-1 Tbs cornstarch
-1 tsp salt
-cooked rice, for serving
-sesame seeds, for garnish
Directions:
Preheat broiler to HIGH. Place green beans on cookie sheet. Coat generously with cooking spray and the sugar. Toss really well. Broil in preheated oven for about 12 minutes, stirring occasionally.
Meanwhile, coat a large skillet with cooking spray. Once hot, add the garlic and pepper flakes. Cook for 30 seconds. Add the pork and break up the chunks while cooking.
In a separate bowl, whisk together the broth, soy sauce, vinegar, and cornstarch. Pour over pork. Add the green beans to the skillet and mix well. Season with the salt. Cook for 3-4 minutes or until the sauce thickens.
Serve hot over cooked rice and sprinkle with some sesame seeds. Enjoy!
