Easy Peach Cake

Peaches are some of my favorites and I try to enjoy them year round. The beauty of this cake is that you can make it any season, whether is with fresh peaches or frozen from your previous harvest. If you use frozen peaches, like I did, make sure to take away as much as the liquid as you can. The flavors combine just beautifully in this super tasty cake. It's so, so delicious! Heaven in every bite! So good! Enjoy!
Ingredients:
-1 cup sugar
-2 large eggs
-1 Tbs vanilla extract
-1 tsp baking powder
-1/3 cup unsalted butter, melted and slightly cooled
-1/2 cup milk
-3/4 cup flour
-1.5 lbs peaches, peeled, pitted, and cut into chunks (the weight is after they've been peeled and pitted)
***if using frozen peaches, it's about 3 cups of them. Also, make sure to drain most of the liquid, so that it doesn't change the texture of the cake***
-powdered sugar, for dusting
Directions:
Preheat oven to 350 F.
Cream the sugar and eggs. Stir in the vanilla and baking powder. Mix well. Add the melted butter. Once well mixed, add the milk and flour. Fold in the peaches.
Coat the bottom and sides of 9 inch springform pan with baking spray (the one with butter and flour). Pour in the batter.
Bake in preheated oven for 55-60 minutes or until the toothpick comes out clean.
Remove from oven and cool completely in the pan.
Once cooled, remove the outer ring and dust the top with some powdered sugar.
Slice and enjoy! YUM!
