Easy Chicken Parmesan

This is super easy to make and so, so delicious! The chicken is tender and the sauce very flavorful. The combination of Panko crumbs with lots of cheese on top makes this dish a winner. Enjoy!
Ingredients:
-8 chicken thighs, skin-on, bone-in
-salt and pepper
-1 clove garlic, minced
-1/2 tsp crushed red pepper flakes
-1 (28 oz) can crushed tomatoes
-2 tsp dry basil leaves
-1/2 cup Italian-style Panko crumbs
-1 cup mozzarella cheese, shredded
-1/2 cup Parmesan cheese, shredded
Directions:
Generously coat a large skillet or wok with cooking spray. Score the chicken thighs and season with salt and pepper. Working in two batches, place the thighs in hot skillet and quickly brown on both sides (about 5-6 minutes per side). Remove onto plate.
Re-coat the skillet with cooking spray and add the garlic and pepper flakes. Give it a good stir and cook for 30 seconds. Add the tomatoes, 1/2 tsp each of salt and pepper, and the basil. Mix well and bring to a simmer. Lower the heat and add all the chicken to it. Make sure that the chicken is covered as much as possible by the sauce. Continue simmering on medium-low heat for 30 minutes, or until chicken is cooked through.
While that's simmering, preheat the oven to HIGH broil.
Once done simmering, remove the skillet from the stove. Sprinkle the Panko crumbs and cheeses evenly on top.
Broil in preheated oven for about 5 minutes or until cheese is bubbly and golden. Enjoy!
