Lexie's Pumpkin Muffins
These are so moist and delicious! They're for sure a family favorite. Enjoy!
Yields 12 muffins
Ingredients:
For muffins:
- 1 1/4 cups sugar
-1 cup canned pumpkin
-1/3 cup vegetable oil
-2 large eggs
-1/2 tsp salt
-2 tsp pumpkin pie spice
-2 tsp baking powder
-1 3/4 cup flour
For topping:
-2 Tbs sugar
-2 tsp honey
-1 Tbs vegetable oil
-1/4 tsp cinnamon
-1/3 cup flour
Directions:
Preheat oven to 375 F. Line muffin pan with paper liners and set aside.
Let's make the muffins. In your electric mixer's bowl, cream the sugar, pumpkin, oil and eggs. Mix very well. Add remaining ingredients and mix until well combine. Pour evenly into prepared pan.
Whisk together all topping ingredients. Sprinkle evenly on top of each muffin.
Bake in preheated oven for 20 minutes or until toothpick comes out clean.
Remove from oven and cool in pan on wire rack for 10 minutes. Remove muffins from pan onto wire rack and cool completely. Enjoy!
