Leslie's Apple Streusel Cake

My friend, Leslie, served this yummy cake to our book club. I instantly fell in love with it and she shared her recipe with me. Of course, I had to make it for my family. And they loved it too. So yummy!  Enjoy!
Ingredients:
For Dough:
-1 1/2 sticks unsalted butter, at room temperature
-1/3 cup sugar
-1 large egg
-1 tsp vanilla extract
-2 cups flour
For Apple Filling:
-5 apples, cored and finely diced
-1 Tbs lemon juice
-1 tsp cinnamon
-1 1/4 cups apple sauce
For Streusel:
-1 1/2 sticks unsalted butter, at room temperature
-1/2 cup packed brown sugar
-2 cups flour
For Garnish:
-whipped cream
-vanilla ice cream
-caramel syrup
Directions:
Coat the bottom and sides of 9x13 dish with baking spray (the one with butter and flour).  Set aside.
In your electric mixer, cream the butter and sugar for dough. Add the egg and vanilla.  Beat well.  Add the flour, half of cup at the time.  Once nice and smooth, spread the dough evenly in prepared pan. Refrigerate until ready to use.
Preheat the oven to 350 F.
Place diced apples in large bowl and mix with filling ingredients.  Mix very well and set aside.
In your food processor, mix the streusel ingredients until nice and crumbly.
Remove dough from the fridge.  Top evenly with apple mixture.  Sprinkle streusel right on top.
Bake in preheated oven for 35-40 minutes or until streusel is golden brown.
Remove from oven and let it cool for a little.  Serve with desired toppings.  Enjoy!
