Seared Salmon in a Spicy Sauce with Sun-Dried Tomatoes

This is such a great dish!  The salmon is super tasty in a nice, creamy sauce enhanced by the sweetness and tanginess of the tomatoes.  Serve this with some rice ( I served ours with broccoli rice), pasta or mashies and you get a delightful meal.  YUM!  Enjoy!
Ingredients:
-olive oil flavored cooking spray
-4 salmon fillets
-salt and pepper
-1/2 cup sun-dried tomatoes
-1 Tbs oil from the sun-dried tomatoes
-4 garlic cloves, finely minced
-1/2 tsp paprika
-1 tsp crushed red pepper flakes
-1/2 cup chicken broth
-1 cup heavy cream
Directions:
Coat a large skillet with olive oil cooking spray and heat it up.
Season salmon with salt and pepper on both sides.  Add to hot skillet and sear until nice and golden broth on both sides.  Remove fish from skillet.
Return skillet to stove and add the oil from the sun-dried tomatoes.  Add the tomatoes, garlic, paprika and red pepper flakes.  Give it a good stir and cook for 1 minute.
Add the broth and bring to a simmer.  Stir in the heavy cream and a little salt and pepper.  Mix well and simmer until thickened.
Return the salmon to the skillet and simmer in that yummy sauce for about 5 minutes.
Enjoy!
