Simple Pork and Beans (Fasole cu Porc)
This is one of my go to meals on busy days. It's done in under 30 minutes and it tastes fantastic! It's such a great comfort food. Now, don't look for any brown sugar in it because you won't find it. 😉 Enjoy!
Ingredients:
-6 slices bacon, chopped
-4 pork chops, boneless
-2 tsp seasoned salt
-1 tsp salt
-2 tsp garlic salt
-1 tsp pepper
-1 onion, finely chopped
-4 (15 oz each) cannelini beans, rinsed and drained
-2 cups water
-2 Tbs tomato paste
-1 Tbs liquid smoke
Directions:
Cook bacon in large sauce pan until nice and brown.
While the bacon is cooking, trim pork chops of fat and cut in chunks. Add to cooked bacon. Season with the salts, garlic powder and pepper. Give it a good stir and cook for 5 minutes. Add the onion, stir and cook until pork is no longer pink and onion is translucent.
Add the beans and water. Give it a good stir and bring to a simmer. Stir in the tomato paste and liquid smoke. Simmer for 5 minutes, adjusting seasoning, if necessary.
Ladle into bowls and enjoy!
