Quick Spinach-Tortellini Soup
Ingredients:
-4 cups chicken broth
-1 1/2 cups water
-6 oz baby spinach
-6 green onions, chopped
-2 tsp Louisiana style hot sauce
-1 (19 0z) bag frozen cheese tortellini
-grated Parmesan cheese
-black pepper
Directions:
Combine broth and water in sauce pan and bring to a boil. Add the spinach, onion and hot sauce. Mix well and cook until spinach is nice and wilted. Add the tortellini and cook for a couple of minutes.
Ladle that goodness into bowls and top with cheese and some pepper. Enjoy!
