-2 lbs chicken thighs, boneless, skinless
-1 tsp salt
-1 tsp pepper
-1 small onion, finely diced
-2 cloves garlic, finely minced
-1/2 cup honey
-1/2 cup soy sauce-1/4 cup ketchup
-2 Tbs vegetable oil
-1/2 tsp red crushed pepper flakes
-3 green onions, sliced, for garnish
-toasted sesame seeds, for garnish
Coat your slow cooker with cooking spray. Season the thighs with the salt and pepper, and lay on bottom of slow cooker.
In a medium bowl, combine the onion, garlic, honey, soy sauce, ketchup, oil and red pepper flakes. Mix well and pour over thighs. Cover and cook on low for 3 1/2 hours.
Shred the chicken, mix it well with the sauce, cover and cook for 30 more minutes.
Serve on top of cooked rice and garnish with the green onions and sesame seeds. Enjoy!
