Zucchini Cornbread

 This is a fantastic way to use your zucchini. The cornbread is sweet and fluffy and absolutely delicious. Enjoy!

Ingredients:

-1/2 cup cornmeal

-1.5 cups flour

-1/3 cup sugar

-1/2 tsp salt

-1/4 tsp baking soda

-2 tsp baking powder

-1 cup buttermilk

-2 large eggs

-4 Tbs (1/2 stick) butter, melted

-1 medium zucchini (about 2 cups) shredded (if thawing from frozen, drain very well)

Directions:
Preheat oven to 350 F. Coat the bottom and sides of 8x8 baking dish with baking spray (the one with the flour and butter). Set aside.

In your electric mixer bowl, add the cornmeal, flour, sugar, salt, baking soda and baking powder. Once well mixed, add the buttermilk and eggs, one at a time. Slowly, pour in the melted butter. Lastly, add the shredded zucchini. Mix well, then pour into prepared pan.

Bake in preheated oven for 35 minutes or until toothpick comes out clean. YUM! Enjoy!
