Apple-Pear Cake

So easy and so delicious! This makes for a great dessert. Enjoy!
Ingredients:
-1 cup sugar
-4 large eggs
-1 tsp vanilla extract
-1 tsp cinnamon
-1 cup vegetable oil
-1/4 cup orange juice
-1 tsp baking soda
-1 tsp baking powder
-2.5 cups flour
-2 apples (we like Gala), peeled, cored, and chopped
-3 pears (we like Bartlet), peeled, cored, and chopped
-1/2 cup chopped pecans
For topping:
-2 Tbs sugar
-1/2 cup chopped pecans
Directions:
Preheat oven to 350 F.
Line a cookie sheet with foil. On top of that, place a 9 inch spring form. Coat the bottom and sides of spring form with baking cooking spray (the one with flour and butter). Set aside.
In your electric mixer's bowl, cream the sugar and eggs. Add the vanilla, cinnamon, oil, and orange juice. Mix well, then add the baking soda, baking powder, and flour, half of cup at the time. Stir in the chopped apples and pears. Finally, add the chopped pecans. Pour that goodness into the prepared spring form.
Sprinkle the sugar and chopped pecans on top.
Bake in preheated oven for 60-70 minutes or until the toothpick comes out clean.
Remove from oven and cool for 10 minutes.
Remove the outer strip from the spring form and let it cool completely. Transfer to serving platter, serve and enjoy!
