Instant Pot Spicy Cashew Chicken

Quick, easy, and delicious! This is a wonderful dish for a busy night. Serve on top of rice. Enjoy!
Ingredients:
-2 large chicken breasts, boneless, skinless, cut into chunks
-3 Tbs cornstarch
-1/2 tsp pepper
-2 Tbs vegetable oil
-1 cup cashews
For sauce:
-1/2 cup soy sauce
-1/4 cup rice vinegar
-1/4 cup sweet chili sauce
-1/4 cup packed brown sugar
-2 garlic cloves, minced
-1/2 tsp ground ginger
-1/4 tsp crushed red pepper flakes
For topping:
-chopped green onions
Directions:
In a large resealable bag, place the the cornstarch and pepper. Give it a good shake to combine well. Add the chicken chunks and make sure to coat evenly.
Heat the IP on the saute setting. Add the oil. Once hot, add the chicken chunks. Quickly saute until golden brown. Turn off the IP.
Whisk together the sauce ingredients and pour over chicken. Top with the cashews.
Set the IP on manual HIGH pressure for 10 minutes. Do a quick release.
Serve immediately on top of rice, with the chopped green onions. Enjoy!
