Falafel
I like falafel, but I have never made it from scratch before. So I finally took the plunge and made it. And it turned out so, so yummy! So fresh and packed with flavor! Super delicious! Make sure to use dry garbanzo beans, not canned. It makes a huge difference in taste and texture. Super good! Enjoy!
Ingredients:
-8 oz dried garbanzo beans
-3-4 green onions, cleaned and roughly chopped
-1 large garlic clove, roughly chopped
-1.5 tsp ground cumin
-1.5 tsp ground coriander
-3/4 tsp cayenne
-1.5 tsp dried parsley leaves
-1 large egg
-1 lemon, juiced
-2 tsp salt
-1.5 tsp baking powder
-1 and 1/3 cups flour, divided
For serving:
-whole wheat pita bread
-shredded lettuce
-chopped tomatoes
-sour cream
Directions:
Soak beans over night. Drain and rinse.
Place soaked beans in food processor. Process until broken down (it will not be a smooth mixture). Add the green onions, garlic, spices, egg, and lemon juice. Once well mixed, add the salt, baking powder, and 1/3 cup of the flour.
Place mixture into a bowl and refrigerate for 30 minutes.
Pour vegetable oil in large skillet for frying.
Remove mixture from fridge. Drop spoonfuls of the mixture into the remaining cup of flour. Roll into balls and gently press into patties. Place into hot oil and fry until beautiful and golden brown on both sides. Remove from skillet onto paper towel lined plate.
Serve warm on pita, with lettuce, tomatoes and sour cream (or any other toppings you'd like). Enjoy!
