Sesame Chicken Salad
This is such a wonderful explosion of flavors! Super delicious and easy! Enjoy!
Ingredients:
-2 chicken breasts, skinless, boneless
-salt and pepper
-cooking spray
-1 Tbs sesame seeds
-1 Tbs black sesame seeds
-10 oz green spring mix
-2 small shallots, thinly sliced
-grape tomatoes, halved
-1 (15 oz) can mandarin oranges, drained
Dressing:
-2/3 cup extra virgin olive oil
-1/4 cup soy sauce
-1/4 cup rice wine vinegar
-1 tsp sesame oil
-2 Tbs packed brown sugar
-1/4 tsp ground ginger
-2 large garlic cloves, peeled
-a pinch of crushed red pepper flakes
Directions:
Generously coat a large skillet with cooking spray and heat up. Cut the chicken in bite sized chunks. Once the skillet is hot, add the chicken chunks and season with salt and pepper. Sear until nice and golden brown. Remove onto a plate and let it cool.
Place all dressing ingredients into a blender and process until smooth.
Pour 1/3 of the dressing into large resealable bag. Add the cooked chicken chunks and all the sesame seeds. Close the bag and shake to coat. Make sure chicken is coated evenly.
To assemble the salad, place some of the greens on a plate. Top with shallots, tomatoes, mandarin oranges and chicken chunks. Drizzle with some of the dressing. Enjoy!
