Banana-Zucchini Bread
What a fantastic combination of flavors! And it's the perfect way of combining those overripe bananas and all that fresh, summer zucchini. So delicious! Enjoy!
-1/3 cup vegetable oil
-2/3 cup sugar
-1 large egg
-1/4 cup sour cream
-1 tsp vanilla extract
-1 tsp salt
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp cinnamon
-3 small ripe bananas
-2 cups shredded zucchini (if frozen, thawed and well drained)
-1 3/4 cups flour
Directions:
Preheat oven to 350 F. Coat the bottom and sides of 9x5 loaf pan with baking spray, the one with flour and butter in it. Set aside.
In your electric mixer bowl, cream the oil and sugar. Add the egg, sour cream, vanilla, salt, baking powder, baking soda, and cinnamon. Once well mixed, add chunks of the ripe bananas (no need to mash before). Add the zucchini and mix well. Finally, add the flour, half of cup at the time.
Once well incorporated, pour that goodness into the prepared pan. Bake in preheated oven for 55-60 minutes or until toothpick comes out clean.
Cool completely, slice and enjoy! YUM!
