Fresh Guacamole Cheesy Chicken

Oh, what a dish this is!  We love, love, love this one!  There's the nice, moist chicken topped with freshly made guacamole, topped with pepper jack cheese, then everything is broiled quickly until it becomes this cheesy yumminess.  Absolutely delicious!  We like ours with a nice serving of broccoli rice.  Enjoy!
Ingredients:
-butter flavored cooking spray
-1 Tbs Creole seasoning
-3 chicken breasts, skinless, boneless
-2 ripe avocados
-1/2 small lime
-2 Roma tomatoes, finely diced
-1/2 small red onion, finely diced
-1/4 tsp garlic powder
-1 tsp salt
-1/2 tsp pepper
-6 slices pepper jack cheese
Directions:
Preheat oven to 400 F.
Spray a cookie sheet with the butter flavored cooking spray.  Right on top of that, sprinkle half of the Creole seasoning.  Cut each chicken breast in half and place on prepared sheet.  Coat the top of each chicken breast half with more cooking spray and remaining seasoning.  Bake in preheated oven for 25 minutes.
While the chicken is baking, let's make the fresh guacamole. Peel and pit the avocados and place in a bowl.  Mash with a fork.  Add the juice of the half small lime, diced tomatoes, diced onion, garlic powder, salt and pepper.  Mix very well.
Once the chicken is done, spoon evenly the guacamole on top of each of them.  Top each with one slice of the cheese.
Set oven to HIGH broil.  Broil chicken goodness for 2 minutes or until the cheese is golden brown and bubbly.
