Pork, Bean and Spinach Soup
Another quick and delicious meal! If you noticed a trend with my recipes, most of them are ready in about 30 minutes. I struggle with free time, so being able to provide a yummy meal in a short time for my family, is a huge success for me. This recipe is definitely a winner. Enjoy!
Ingredients:-1 Tbs extra virgin olive oil
-about 1 lb pork, boneless, trimmed of visible fat, cut into bite size chunks
-salt, to taste
-1 medium onion, chopped
-4 cloves garlic, minced
-2 tsp paprika, smoked is preferred, but if not, regular is just fine
-1/4 tsp crushed red pepper
-1 cup apple juice
-1 (14.5 oz) can petite diced tomatoes, undrained
-4 cups chicken broth
-1 large bag baby spinach
-1 (15 oz) can navy beans, rinsed and drained
Directions:
Heat oil in large saute pan. Add chunks of pork. Season with salt and cook until nicely browned. Remove cooked pork from heat, but leave all the juices in the pan.
To the pan and onion and cook for a couple of minutes. Then add garlic, paprika and crushed red pepper. Cook stirring occasionally for about 30 seconds. Add apple juice and tomatoes with juice. Stir, scrapping off the browned bits at the bottom of the pan. Add broth and bring to a boil. Add spinach and stir until it wilts. Stir in beans and cooked pork with any juices accumulated. Simmer for a few minutes. Enjoy!
