In honor of St. Patrick's day, here's one of my favorite Irish dishes. It's super simple and absolutely amazing! You've got to try it! Enjoy!
-about 4 lbs potatoes, peeled and cut in large chunks
-1/2 cup milk
-salt, to taste
-1 1/2 onions, finely chopped
-1/4 cup butter
-8 oz shredded cabbage
In large saucepan, boil potatoes until fork tender. Meanwhile, heat the butter into large saute pan. Once butter is melted, add the onion and cook for about a minute. Add the cabbage. Cover and cook over medium-low heat for about 20 minutes.
Preheat broiler on high.
Drain the potatoes. Add milk and salt. Mash with electric mixer until nice and creamy. Stir in cabbage mixture. Pour the whole thing into oven safe dish. Broil for about 6 minutes or until top is browned. Enjoy!
