Piccata Chicken

-2 boneless, skinless chicken breasts, cut in half
-1/4 cup flour
-1/2 tsp salt
-1/2 tsp ground white pepper
-2 Tbs oil
-1/2 cup apple juice
-2 tsp Worcestershire sauce
-2 Tbs lemon juice
-dried parsley leaves
-a handful of capers
Place each chicken breast half between plastic wrap and tenderize it with a meat mallet until about 1/4 inch thick.  Meanwhile, heat the oil in a large saute pan. 
In a shallow bowl, combine flour, salt and white pepper.  Dredge tenderized breast through it, shake excess and place in heated oil.  Cook for about 3 minutes on each side, or until chicken is cooked through.  Remove chicken from pan and cover to keep warm.
In the same pan (with all the juices left), add apple juice and Worcestershire sauce.  Cook for about 1 minute.  Stir in lemon juice, parsley and capers.  Pour sauce over chicken and serve immediately.  Enjoy!
