Roasted Sweet Potato-Feta-Pomegranate-Pistachio Salad
Ingredients:
-3 sweet potatoes, peeled and cut into chunks
-1 Tbs extra virgin olive oil
-1 tsp salt
-1 small pomegranate, seeded
-1/2 cup pistachios, roasted and roughly chopped
-1/2 cup good feta cheese, crumbled
For dressing:
-1 orange, zested and juiced
-1 Tbs red wine vinegar
-1 clove garlic, minced
-1 tsp Dijon mustard
-2 tsp honey
-1 tsp salt
-1 tsp pepper
-6 Tbs extra virgin olive oil
Directions:
Preheat oven to 400 F. Place potato chunks on cookie sheet. Drizzle with the oil and sprinkle with the salt. Give it a good stir. Bake in preheated oven for 25 minutes.
Remove from oven and let it sit for 5 minutes.
Place roasted potatoes in large salad bowl. Add remaining salad ingredients. Toss well.
In a small bowl, whisk together dressing ingredients. Pour over salad. Give it a good stir. Enjoy!
