Cheesy Orzo, Shrimp, and Bacon Casserole

Easy and delicious! This is another wonderful meal for a busy week night. Enjoy!
Ingredients:
-3 cups chicken broth
-1 1/2 cups orzo
-1 lb bacon, chopped
-1 bunch green onions, cleaned and finely chopped
-1 large garlic clove, minced
-1 cup grated Parmesan cheese, divided
-1 tsp salt
-1 tsp pepper
-1 lb small shrimp, peeled, deveined, with tails removed
-1 cup sour cream
Directions:
Preheat oven to 350 F. Coat the bottom of 9x13 baking dish with cooking spray and set aside. 
In a large pot, bring the broth to a boil. Lower the heat and add the orzo. Give it a good stir and boil for about 15 minutes or until all liquid is absorbed.
Meanwhile, fry bacon in large skillet. Once golden brown, remove bacon onto paper lined plate, to drain. 
Discard all but 1 Tbs of the bacon drippings and return skillet to stove. Add the onion and garlic.  Cook for a couple of minutes.
Once the orzo is done cooking, remove pot from stove. Add the drained bacon, onion and garlic mixture, half of the cheese, salt, pepper, shrimp and sour cream. Mix very well, then pour into prepared baking dish. Sprinkle on top with remaining cheese.
Bake in preheated oven for 25 minutes. Remove from oven, let it stand for 5 minutes, scoop onto serving dishes and enjoy! Yum!
