Instant Pot Mashed Potatoes

After fiddling with this for a few weeks, I finally got the mashed potatoes to the right texture and taste. I just don't like draining the water from the potatoes, so I made a few versions from boiling them in milk to boiling them in a mixture of milk and water, so that I don't have to do any draining. And I finally got it right! And they're so tasty and creamy and quick and delicious! Enjoy!
Ingredients:
-1/2 cup water
-1 cup milk (at least 2%)
-5 lbs yukon gold potatoes, peeled and cut into chunks
-2 tsp salt, plus more for later
-1 stick (1/2 cup) butter
-1 tsp pepper
-1/4 cup sour cream
Directions:
Coat the bottom of your IP with cooking spray. Add the water, milk, potatoes and 2 tsp salt. Mix and close the lid with the valve in the sealed position.
Set to manual HIGH pressure for 10 minutes. Do a quick release.
Remove the lid and the inner pot from the IP. Using a potato masher, start mashing the potatoes. Add the butter, pepper, extra salt (about 2-3 tsp), and sour cream. Mash until nice and creamy. Enjoy! YUM!
