Cheesy Grits and Bacon Casserole
This is serious comfort food. So yummy, hearty and delicious! Enjoy!
Ingredients:
-1 lb bacon, chopped
-3 cups water
-3 cups chicken broth
-1 tsp garlic powder
-1 tsp pepper
-2 cups quick grits
-2 cups shredded sharp cheddar cheese
-1/2 cup (1 stick) butter, cut into chunks
-1/2 cup milk (no lower than 2%)
-4 large eggs, beaten
-2 cups shredded white cheddar cheese
Directions:
Preheat oven to 350 F. Coat the bottom and sides of 9x13 dish with cooking spray and set aside.
In a large saucepan, cook the bacon chunks until nice and crisp. Remove onto paper towel lined plate.
Keep 1 Tbs of the bacon drippings in the pan and discard the rest. To the saucepan, add the water, broth, garlic powder and pepper. Give it a good stir and bring to a boil.
Add the grits and stir well. Cover and cook on medium-low heat for about 6 minutes, or until thickened, stirring occasionally.
Remove pan from stove. Stir in the sharp cheddar and butter chunks. Add the milk and mix well. Slowly, stir in the eggs. Once well mixed, pour into prepared pan.
Sprinkle with the bacon chunks and white cheddar.
Bake in preheated oven for 40 minutes.
Remove from oven and let it stand for 10 minutes. Slice and enjoy! YUM!
