Louisiana Fish with Okra and Corn
This is a nice and light dish on a busy night. Enjoy!
Ingredients:
-2 cups fresh or frozen sliced okra
-1 3/4 cups fresh or frozen corn kernels
-1 medium onion, chopped
-2 tsp PLUS 1 Tbs extra virgin olive oil, divided
-2 tsp Cajun seasoning, divided
-about 5 fillets tilapia
Directions:
Preheat oven to 450 F.
In a baking dish, combine okra, corn, 2 tsp oil and 1 tsp Cajun seasoning. Mix well. Place in preheated oven and roast for 20-25 minutes.
Meanwhile, sprinkle both sides of the fish with remaining seasoning. Heat remaining oil in large skillet. Add fish and cook for about 4 minutes per side, or until easily flaked with a fork.
Serve fish with roasted veggies. Enjoy!
