Vanilla Pumpkin Bread
This is super moist and oh, so very flavorful! Easy and delicious! YUM!
Recipe yields two 9x5 loavesIngredients:
-5 large eggs
-1 cup vegetable oil
-1 cup sugar
-2 (3.4 oz each) packages vanilla pudding mix
-1 tsp baking soda
-1.5 tsp cinnamon
-a pinch of salt
-2 tsp vanilla extract
-1 (15 oz) can pumpkin
-2 cups flour
Directions:
Preheat oven to 350 F. Coat the bottom and sides of two 9x5 loaf pans with baking spray (the one with flour and butter). Set aside.
Mix the eggs, oil and sugar. Once smooth, add the pudding, baking soda, cinnamon, salt, vanilla and pumpkin. Mix very well, then add the flour, half of cup at the time.
Once well mixed, divide the batter evenly between the two prepared pans.
Bake in preheated oven for 55-60 minutes or until the toothpick comes out clean.
Remove from the oven and cool in pans for 15 minutes. Remove from pan and cool completely. Slice and enjoy!
