Romanian Plum Cake

 Airy, fluffy and absolutely delicious! This is such a wonderful treat. The plums give it such a nice, unique flavor. Perfect combination. Enjoy!

Ingredients:
For cake:
-1/2 cup (1 stick) butter melted and cooled a little
-1/2 cup sugar
-2 large eggs
-1 tsp baking powder
-1 cup flour
-3 Tbs warm milk
-2-3 plums
For topping:
-1/2 Tbs sugar
-1/4 tsp cinnamon
Directions:
Preheat oven to 350 F. Coat the bottom and sides of 9-inch spring pan with baking spray (the one with flour and butter). Set aside.
Cream the melted butter, sugar and eggs. Add the baking powder, flour and warm milk. Once well mixed, pour into prepared pan.
Cut the plums and place on top of the batter.
Mix the topping ingredients and sprinkle right on top.
Bake in preheated oven for about 40 minutes or until the toothpick comes out clean.
Cool, slice, and enjoy! YUM!
