Pumpkin Bread with Pumpkin Seeds

 This is another great recipe for pumpkin bread. The toasted pumpkin seeds on top give it such a nice texture and some extra flavor with a bit of saltiness. So yummy! Enjoy!

Recipe yields two loaves
Ingredients:
-8 large eggs
-2 cups sugar
-1/2 cup packed brown sugar
-1 tsp vanilla extract
-1.5 cups vegetable oil
-1 (15 oz) can pumpkin
-4 tsp pumpkin pie spice
-2 tsp baking soda
-1 tsp baking powder
-1/2 tsp salt
-3 cups flour
Topping:
-roasted and shelled pumpkin seeds
Directions:
Preheat oven to 350 F.
Coat the bottom and sides of two 9x5 loaf pans with the baking spray (the one with flour and butter). Set aside.
Cream the eggs, sugars and vanilla. Once well mixed, add the oil and pumpkin. Stir in the spice, baking soda, baking powder and salt. Finally, add the flour, half of cup at the time.
Once well mixed, divide the mixture evenly between the prepared pans.
Top each with some shelled pumpkin seeds (around 1/4 cup each).
Bake in preheated oven for 65-70 minutes or until the toothpick comes out clean.
Cool in the pans for 15 minutes, then cool completely on wire rack. Slice and enjoy! YUM!
