Beef and Veggies Stir Fry

 Quick, easy and delicious! Enjoy!

Ingredients:
-1 Tbs vegetable oil
-4 cloves garlic, minced
-1 lb lean ground beef
-1 (16 oz) bag tri-color slaw mix
-2 yellow/red/orange bell peppers, halved and cut into strips
-1/4 cup soy sauce
-1 Tbs cornstarch
-1 cup water
-1 tsp pepper
Directions:
Heat oil in large skillet or wok. Add the garlic, then immediately the beef, breaking it as it cooks. Once the beef is nicely browned, drain excess fat.
Return wok to stove and add the slaw mix, bell peppers and soy sauce. 
Mix together the cornstarch and water. Stir it in. Season with the pepper. Give it another good stir and cook for a couple of minutes.
Serve on top of cooked rice. Enjoy!
