Salmon Caesar Salad

 This is another quick meal for a busy week night. The flavors are great together and this meal is nice and satisfying. Enjoy!

Ingredients:
For dressing:
-2 garlic cloves, peeled
-1 (2 oz) can anchovy fillets in olive oil, do NOT drain
-2 egg yolks
-1 Tbs Dijon mustard
-1/4 cup freshly squeezed lemon juice (about 1/2 of lemon)
-2 Tbs water
-1/2 tsp honey
-1/2 cup extra virgin olive oil
-1/2 cup shredded Parmesan cheese
For salad:
-torn Romaine lettuce
-cucumber, peeled and sliced
-cherry tomatoes, halved
-1 (14.75 oz) can Alaskan pink salmon
-shredded Parmesan cheese
-shelled sunflower seeds
Directions:
Place all dressing ingredients in a blender. Process until smooth.
To assemble your salad: place from torn lettuce onto your bowl/plate. Top with cucumber, tomatoes, salmon, cheese, seeds, then drizzle with some of that delicious dressing. Enjoy!
