Roasted Lemony Tilapia and Potatoes
This is very refreshing and super delicious. It's also super quick. Enjoy!
Ingredients:
-butter flavored cooking spray
-2 lbs Yukon gold potatoes, peeled and sliced
-salt and pepper
-garlic powder
-1 lemon
-4 tilapia fillets
-1 tsp dried parsley leaves
Directions:
Preheat oven to 450 F.
Coat the sides and bottom of 9x13 baking dish with butter flavored cooking spray. Arrange the sliced potatoes on the bottom in a single layer, if possible (it's ok to overlap some of them). Spray the top of the potatoes with the butter spray. Drizzle with the juice from half of the lemon. Season with some salt, pepper, and garlic powder.
Cover the pan tightly with foil and roast in preheated oven for 20 minutes. Remove the foil and roast for 10 more minutes.
Remove pan from oven (but keep the oven on). Add the tilapia fillets right on top of the roasted potatoes. Generously spray the tilapia with the butter spray. Drizzle juice from remaining half of lemon on top. Season with salt, pepper, and garlic powder.
Return pan to oven and roast for 10 minutes.
Turn off the oven and switch to HIGH broil. Broil for 2 minutes. Serve immediately. YUM! Enjoy!
