Chicken Strips in a Creamy Mustard Sauce

 This is super easy and super delicious, making it a fantastic choice for a busy week night dinner. I served ours on top of rice, but mashies would be great as well. Enjoy!

Ingredients:
-2 Tbs extra virgin olive oil
-2 Tbs butter
-2 chicken breasts, skinless, boneless cut into strips
-salt and pepper
-3 large garlic cloves, minced
-1 cup sherry cooking wine
-2 Tbs country Dijon mustard
-1/2 cup heavy cream
-1/2 cup chicken broth
Directions:
In a large skillet, heat the oil and butter. Season the chicken strips with salt and pepper on both sides. Add to the hot oil and sear until golden brown. Remove onto a plate.
Return skillet to the stove (do not drain anything). Add the garlic and cook for 30 seconds. Stir in the wine, making sure to scrape all the chicken bits and browning stuff. Cook for 4-5 minutes or until reduced in half.
Stir in the mustard, cream, and chicken broth. Add a little bit of salt and pepper. Give it a good stir.
Return the chicken strip and any juices left on the plate to the skillet. Cover chicken in sauce and cook for another 5 minutes.
Serve immediately on top of rice. YUM! Enjoy!
