Savory Chicken Meatballs and Orzo Soup

The key to this soup are the meatballs. They are packed with so much flavor! The orzo is a wonderful addition as well. Such a fantastic dish for a cold day. Enjoy!
Ingredients:
For meatballs:
-1 lb ground chicken
-1/2 cup Italian-style breadcrumbs
-1 large egg
-2 garlic cloves, minced
-1 tsp dried dill
-1 tsp salt
-1 tsp pepper
For soup:
-2 Tbs vegetable oil
-1 small onion, finely diced
-1 large carrot, finely shredded
-2 garlic cloves, minced
-6 cups chicken broth
-1 tsp salt
-1 tsp pepper
-1 cup uncooked orzo
-1 tsp dried dill
Directions:
Mix all ingredients for meatballs. Using your hands, form the meatballs and set aside.
In a large pot, heat the oil. Brown meatballs on all sides, then remove onto a plate.
In the heated oil, add the onion and carrot. Give it a good stir and cook for 3-4 minutes. Add the garlic and cook for one more minute. Add the broth, salt, and pepper. Stir and bring to a boil.
Return the meatballs and any juices accumulated to the pot. Stir in the orzo and dill. Give it a good stir and cook for 12 minutes.
Ladle into bowls and enjoy! YUM!
