Pork with Cheddar-Cornbread Crust Casserole

This is comfort food. Good, hearty, delicious comfort food. The flavors are fantastic and your belly will be very happy. Enjoy!
Ingredients:
For the pork:
-2 (14.5 oz each) cans Italian-style stewed tomatoes with basil, garlic and oregano
-1 onion, finely diced
-1 poblano pepper, seeded and chopped
-2 garlic cloves, minced
-2 tsp chili powder
-1 tsp dried oregano leaves
-3/4 tsp cumin
-2 tsp salt
-1 tsp pepper
-1/2 tsp sugar
-2 lbs pork, boneless, cut into chunks
For Cheddar-Cornbread Crust:
-1/3 cup yellow cornmeal
-3 Tbs flour
-1 tsp salt
-1 tsp baking powder
-1/4 cup buttermilk
-1 large egg
-1 Tbs butter, melted
-1 cup shredded extra-sharp cheddar cheese
Directions:
Preheat oven to 350 F. Coat a 9x13 baking dish with cooking spray. Dump all ingredients for the pork in it. Mix very well. 
Bake, uncovered, for 45 minutes.
Remove from oven. Increase the oven temperature to 400 F.
Combine all crust ingredients and spread over pork mixture.
Bake in preheated oven for 20 minutes.
Remove from oven and let it sit for 10 minutes. Dish up and enjoy!
