Savory Chicken and Zucchini
Oh, the flavors of this dish! The herbs are magnificent in this dish and the zucchini still has a nice crunch to it. So, so delicious! We like our with mashies, but fresh polenta, rice, or bread can work just fine. Enjoy!
Ingredients:
-4 Tbs butter
-4 garlic cloves, minced
-1/2 tsp dried oregano leaves
-1/2 tsp dried rosemary
-1/4 tsp dried thyme
-1/2 tsp crushed red pepper flakes
-3 chicken breasts, boneless, skinless, cut into chunks
-2 tsp salt, divided
-2 tsp pepper, divided
-2 zucchinis, quartered, then sliced
Directions:
Melt butter in large skillet. Add the garlic, oregano, rosemary, thyme, and pepper flakes. Give it a good stir. Add the chicken chunks and season with 1 tsp salt and 1 tsp pepper. Cook until chicken chunks are nice and golden brown. Remove onto a plate.
Return skillet to stove and add the zucchini. Season with remaining salt and pepper. Cook for 2 minutes. Return chicken and all accumulated juices to the skillet. Mix everything very well and cook for one more minute.
Serve immediately on top of mashies (or fresh polenta/rice, etc). YUM! Enjoy!
