Slow Cooker Parmesan-Herb Chicken and Potatoes
This one is another family favorite. It's a full meal in the slow cooker waiting for you at the end of a long, busy day. I love the combination of flavors in this one. The potatoes are perfectly cooked and the chicken is so tender that it literally fall off the bone. Delicious! Enjoy!
Ingredients:
-2 lbs potatoes, peeled and cut into large chunks
-1 Tbs extra virgin olive oil
-2 tsp salt, divided
-2 tsp pepper, divided
-2 tsp garlic powder, divided
-2 tsp dried basil, divided
-2 tsp dried oregano, divided
-1 tsp dried rosemary, divided
-4 chicken thighs, skin-on, bone-in
-shredded Parmesan cheese
Directions:
Coat the bottom and sides of your slow cooker with cooking spray.
Place potato chunks in slow cooker. Drizzle with the oil. Sprinkle with 1 tsp salt, 1 tsp pepper, 1 tsp garlic powder, 1 tsp basil, 1 tsp oregano, 1/2 tsp rosemary. Place chicken on top of seasoned potatoes and sprinkle with remaining spices and herbs.
Cover the slow cooker and cook on low for 5 hours.
To serve, scoop some potatoes and a piece of chicken on a plate and sprinkle a generous helping of shredded Parmesan on top. Enjoy!
