Lemon-Artichoke Chicken

This is an easy to make, but hearty dish.  I paired it up with my beans mashies and they were perfect together. You can serve it with regular mashies or even rice. Very tasty!  Enjoy!
Ingredients:
-2 Tbs oil
-4 Tbs (1/2 stick) salted butter
-4 chicken thighs, skin-on, bone-in
-salt and pepper
-1 red onion, finely chopped
-1 lemon, juiced
-24 oz marinated artichoke hearts, quartered and drained
-1 cup chicken broth
Directions:
Preheat oven to 350 F.
In ovenproof skillet, heat the oil and melt the butter. Score chicken thighs and season with salt and pepper on both sides.  Add to hot oil mixture and brown on both sides. Chicken will not be cooked through at this point, at that's ok. Remove chicken onto plate and set aside.
Return skillet to stove and add the onion.  Cook for about 5 minutes or until nice and soft.  Add the lemon juice and a little salt and pepper.  Give it a good stir and cook for a couple of minutes.
Add the artichoke hearts and broth. Return chicken and any accumulated juices to the skillet. Cover and place in preheated oven.
Bake for 45 minutes. Remove from oven, uncover and let it rest for 5-10 minutes.  Serve over mashies and enjoy!
