Beans, Leeks and Cauliflower Mashies

I love beans and leeks together.  The flavors on this simple side dish are great, sweet and buttery. Enjoy!
Ingredients:
-2 Tbs salted butter
-2 leeks, trimmed, cleaned very well, and cut into chunks
-salt and pepper
-3 (15 oz) each cans white beans, drained and rinsed
-1 (12 oz) bag steamable bag of cauliflower florets
-1/2 cup chicken broth
-chives, for garnish
Directions:
Melt butter in skillet.  Add leeks, season with salt and pepper and cook until nice and soft, about 5-7 minutes, stirring occasionally.
Meanwhile, add the drained beans to your food processor.  Steam the cauliflower according to package directions, then add to the processor.  Once leeks are done cooking, add them as well, along with the broth and a little more salt and pepper.  Process until nice and smooth and texture is to your liking.
Pour mixture into serving bowl and top with chives.  Enjoy!
