Pineapple-Soy Chicken and Rice Bake

This is a great one pot kind of dish.  All is placed in a casserole dish, baked and the result is a yummy, hearty dish.  The flavors are wonderful together and the pineapple gives it such a nice, refreshing taste.  Delicious!  Enjoy!
Ingredients:
-1 cup brown sugar
-1/2 cup soy sauce
-3 cups chicken broth
-2 cloves garlic, minced
-3 cups instant rice
-1 onion, finely diced
-1 red bell pepper, chopped
-1 (20 oz) can pineapple tidbits WITH the juice
-3 lbs chicken tenders
Directions:
Preheat oven to 425 F.
Coat a 9x13 pan with cooking spray.  To that, add the sugar, soy sauce and broth.  Whisk until smooth.  Add the garlic and rice.  Stir carefully.
Add the onion, bell pepper and pineapple with the juice from the can.  Give it another stir.  Place the chicken on top.
Cover with foil and bake in preheated oven for 25 minutes.
Remove foil and stir contents as much as possible.  Place pan, uncovered, back in the oven and cook for 25 more minutes or until chicken is cooked through.
Stir again and serve!  Enjoy!
