Lexie's Vanilla Cupcakes
My sweet daughter made these delicious cupcakes for us the other day. They are very easy and tasty. You can frost and decorate them however you want. Yum! Enjoy!
Recipe yields 12 cupcakes
Ingredients:
-1/2 cup (1 stick) unsalted butter, at room temperature
-1/2 cup (1 stick) unsalted butter, at room temperature
-1 cup sugar
-2 large eggs
-2 tsp baking powder
-1/2 tsp salt
-2 tsp vanilla extract
-1/2 cup milk
-2 cups flour
Directions:
Preheat oven to 375 F. Place cupcake liners in muffin pan and set aside.
In your mixer, cream the butter and sugar until nice and smooth. Add the eggs, one at a time. Mix very well. Add baking powder, salt and vanilla. Stir in the milk and flour, half of cup at a time.
Divide the batter equally between the 12 cupcakes in prepared pan.
Bake in preheated oven for 22 minutes or until toothpick comes out clean.
Place pan on wire rack to cool for 10 minutes. Carefully remove the cupcakes onto wire rack and let cool completely. Decorate and enjoy!
