Ioana's Perfect Fried Chicken

I LOVE fried chicken!  For me, it's one of those comfort foods.  This is another simple recipe, quick to put together, with amazing results.  Enjoy!
  Ingredients:
-vegetable or canola oil, for frying
-8 chicken thighs, bone-in and skin-on
-1 1/2 cups flour
-1 1/2 Tbs seasoned salt
-1 Tbs garlic powder
-2 tsp ground black pepper
Directions:
Heat oil in frying pan to medium heat.  Do not raise the temperature or your chicken will burn and not cook all the way through!
Score each thigh on both sides.
Mix flour, salt, garlic powder, pepper and cayenne in shallow dish.  Season both sides of the chicken with some seasoned salt, garlic powder and pepper, then dredge it through the flour mixture and coat well on both sides.  Add chicken to hot oil.  Cook for 10-15 minutes on each sides, or until golden brown.  Drain on paper towels and enjoy!
I served mine with garlic sauce and french fries.  Enjoy!

Obviously, being married to Ioana means trying all her food. I'm not a huge fan of adding the garlic sauce to this, but it's not bad. But the fried chicken in this case is great. It's tender and has just enough breading to make it work with out overloading you. One of my favorites.
