Orange Bars with Coconut Shortbread Crust
These are so, so good! The crust is tender, buttery, and coconuty. It's a perfect bite every time. Absolutely delicious! Enjoy!
Ingredients:
-1 1/2 cups sweetened coconut flakes
-1/2 cup powdered sugar
-1/2 cup packed brown sugar
-1/2 tsp cinnamon
-1 tsp vanilla extract
-1 tsp coconut extract
-1 1/2 cups (3 sticks) cold unsalted butter, cut into chunks
-2 cups flour
-1 (17.5 oz) jar orange marmalade
Directions:
Preheat oven to 350 F.
Place the coconut flakes, powdered sugar, brown sugar, and cinnamon in your food processor. Pulse until well combined. Add the extracts and pulse a couple of times to mix them in. Add a third of the butter and half of cup of flour. Mix well. Add another third of the butter and half of cup of flour, then pulse until well combined. Add remaining butter and flour and mix well.
Spray the bottom and sides of 9x13 pan with baking spray (the one with flour and butter in it). Add half of the crust and pat it down with your hands until it evenly spread out.
Top with the marmalade and spread evenly with a spatula.
Sprinkle remaining crust on top.
Bake in preheated oven for 50 minutes or until the top is golden brown.
Take that beauty out of the oven and let it cool completely on wire rack.
Once done, place in the fridge for a couple of hours. Then, once really chilled, take it out of the fridge and cut into bars. YUM!! Enjoy!
