Trisha's No Fuss Turkey

 I got Trisha Yearwood's cookbook and found her turkey recipe. It seemed way too easy and I seriously doubted it would work, but, with nothing to lose, I went ahead and tried it. I am soooo glad I did, because this is seriously the easiest and most delicious turkey ever! Just make sure to NOT OPEN that oven door AT ALL during the process. I put signs on my oven door to make sure that it stayed closed.:) Also, go ahead and invest in a large roasting pan with a lid. So easy, so moist, and so delicious! And you can roast a whole chicken the same way. Play with the seasonings and make it your own. So yummy! Enjoy!

Ingredients:
-1 (12-14 lbs) turkey, thawed, with giblets removed
-softened butter (if using a Butterball turkey, you don't need much butter)
-salt and pepper
-1 large onion, peeled and halved
-1 large carrot, peeled and halved
-2 cups boiling water
Directions:
Adjust the oven rack so that the roasting pan with the lid can easily fit in. Preheat the oven to 500 F.
Generously butter the turkey both front and back, inside the cavity and everywhere. Season with salt and pepper wherever you buttered it.
Pour the boiling water in the roasting pan. 
Place the prepared turkey on the rack in the roasting pan, breast side up. Place the onion and carrot inside the cavity. 
Cover the pan with a tight fitting lid and place in the preheated oven. 
Roast for exactly one hour, then turn off the oven. DO NOT OPEN the oven door!!! Leave the turkey in there (covered) to continue cooking, about 3-4 hours.
